In an effort to add some nutritional goodness to sweet rolls, I came up with this healthier alternative to the all white
flour sweet dough.

The
sweet potato gnocchi recipe itself is pretty straightforward — cook
sweet potatoes, rice them, add
flour, stir in an egg and work the
dough until it's no longer sticky.
If the
sweet potato is too sticky, add more
flour as needed until you can form a log with the
dough.

Cause 3 medium Australian
sweet potatoes was way too much and I had to add more
flour to get a
dough texture.
I adapted the recipe just slightly by adding 1 cup peeled, chopped local apple, 1/2 cup of organic raisins, an additional 2 tablespoons of honey, and a bit of extra
flour to the
dough (I also omitted the sesame seeds on top as I didn't think they meshed with the
sweeter bread).
Preheat the oven to 400 degrees F. Put the
sweet potatoes, 2 1/2 cups
flour, butter, brown sugar, baking powder, and cream in a stand mixer fitted with a paddle attachment or food processor and process until the
dough has small lumps of

I do think you could successfully substitute a gluten - free all - purpose
flour blend for the buckwheat and
sweet rice
flours, however, or a gluten - full
flour (AP, whole wheat, spelt, or rye — in this case, skip the step of beating the
dough for 20 seconds).
I love using quinoa
flour to make bread, pizza
dough and other savory recipes, but it also goes well with chocolate desserts and other

dough is considered to be
sweet, or high in sugar, when it contains more than 1/2 cup of sugar for every 4 cups of
flour.

At best they are made more nourishing and digestible if the
dough is fermented overnight, but there's no doubt that their addictive,
sweet, tender (when fresh), dense, and chewy texture is derived for the most part from the use of refined wheat
flour and refined sugars, making them unsuitable for the increasing numbers of gluten - sensitive and gluten - intolerant individuals, let alone those wanting to avoid refined sugar.
