I turned the mash out onto the
work surface, added 60 g of gf
flour mix, salt, pepper and a pinch of nutmeg and
just started kneading.

just suggest chilling the dough properly so that your house shapes keep the right form, and then trimming the edges when they're warm our of the over so the icing adheres better.

flour to dust your
work surface.

just bring the dough together, turning out onto a
work surface to complete bringing it together with your hands.
