There isn't a particular
brand which I use, I just buy organic buckwheat or brown rice
flour which are both gluten free.

I don't think the lack of frothiness is the issue, I'm guessing it could be the type /
brand of almond
flour used in the recipe.

flour — I use Honeyville
brand, it works the best 2 cups rolled oats (
not instant)-- certified gluten - free if you are intolerant 1 cup fresh pumpkin puree (canned will also work) 1 teaspoon baking powder 1 teaspoon baking soda 1/2 teaspoon salt 1/2 cup grapeseed oil (olive oil, melted coconut oil or ghee would also work) 1/2 cup organic local honey (maple syrup would be great here, too) 1 large farm fresh brown egg (or egg replacement of your choice) 1 1/2 teaspoons ground cinnamon 1 teaspoon ground nutmeg 1 teaspoon vanilla extract 3/4 cup raisins (dried cranberries or mini chocolate chips would also be delicious) 1 1/2 tablespoons flaxseed (optional)

flour to use for grain - free nut - free breads and if paleo is
not your concern just go for Udi's or Rudi's
brand gluten - free hamburger buns.

flour brand to one you recommend (nuts.com, as I used one you advise
not to use), using what I now read is a better scooping method of dipping vs pouring into the measuring cup to get more
flour, and buying a mini-muffin tin vs standard - size tin I used yesterday.
Many other
brands don't include xanthan gum or if using your own DIY GF
flour blend, so naturally you would add the xanthan gum:)
Last tip - if you're
not already doing so, be sure you're using King Arthur
Flour All - Purpose
Flour rather than another
brand.

brand to get the results but I had to improvise so I sifted the
