This is a really easy vegan
focaccia bread to make
using only 4 simple ingredients once you've made your homemade dough - roma tomatoes, onions, rosemary and olive oil.
(This is very similar to the technique
used when making
focaccia bread.)
Using a large
bread knife, cube 6 - 8 pieces of
Focaccia bread approximately 1 1/2» each.

Tip for fresh ground wheat - I
use it in recipes for

use as the two
bread slices to sandwich ingredients between.
Note, this is not an «authentic»
focaccia as it doesn't
use yeast but is in effect a quick
bread based on this flatbread recipe.
When I googled «potato
focaccia,» all I found were
breads with potato in the dough, and nothing gave me instructions how to
use the potatoes on top.
I
used half split pea and half red lentil and served with the
focaccia bread from this site — lovely hot meal on a cold, wet November day.
Using seasonal fruits in
focaccias is one way of upgrading your sourdough
bread and it's basically making two in one -
bread and dessert.
It's a good way to make
use of leftover
focaccia, ciabatta, or other open - crumbed, holey
bread that's gone a little south, and the shatteringly crisp result lasts for weeks.
I
used homemade
focaccia in this stuff, but you could obviously
use store or bakery bought
bread as well.
The Italian
bread used for the eight panini is good as well, though another option,
focaccia, tasted spongy and dull on a recent visit.
Luckily, I enjoy making my own
breads at home from natural wholesome low carb ingredients like almond flour, which I
use in this delicious herbed
focaccia recipe.
Extra-large plates with deep pockets mean you can
use really thick
bread or
focaccia, and cram in more ingredients, to boot.
