Prepare muffin pans (line muffin pans with 24
foil liners, for regular - sized muffins, or spray mini pans with canola spray or line with
liners - you can use
liners if you'd like, but we usually don't bother when making mini muffins).
I just find the
foil liners less sticky, but
if paper
liners work for you, that would be fine.
Word to the wise
if you think you may want to freeze them (they freeze amazing) then I would bake them in paper
liners and NOT the
foil ones because you can't microwave those and its annoying to have to peel them off.
I don't use
liners (just a non-stick muffin pan sprayed with cooking spray), or
if I do, I use the
foil liners with the paper line removed.
However,
if you don't own a silicon muffin old, make sure to use paper
liners or
foil liners in your muffin mold so they come out easier.
If you don't have paper
liners, you can fashion 12 cups out of aluminum
foil, but this is rather annoying.
