Cover the loaf pans with
foil that's been
tented so
as to leave room for the bread to rise when it bakes.
(If the bread looks
as if it's getting too brown
as it bakes, cover it loosely with a
foil tent).
The only change I would make is
tenting the loaf with
foil at the beginning of the bake
as opposed to later on when I realized it was browning very quickly.
Remove from the oven,
tent with
foil carefully so
as not to touch the shallot mixture, and rest 15 minutes before slicing and serving with some roasted Dutch baby potatoes and Brussels sprouts.
I like to
tent my pork butts with
foil and let them rest for at least one hour and up to three
as long
as they stay above 140 °F.
