Hi Gretchen just wondering, if you said that ganache only can stay in room temperature for 1 day, why nowadays many people use ganache for
filling or coating under
fondant for the 3D or wedding
cake?
So I was really really happy when I discovered this method of
filling cakes with milk products, gelatine and fruit without having to worry about the
fondant melting.
While, my plan was for a simple vanilla
cake and
fill it with blueberry whipped cream and then cover it with buttercream frosting, at the last moment I decided that I wanted to cover the
cake in
fondant.
