A number of you also pointed me toward a recipe published in
and Food &
Wine and Fine Cooking by cookbook author Pam Anderson, who should not be confused with Pamela Anderson, formerly of Baywatch
and Tommy Lee,
and I
make that clarification because I was, myself, briefly confused.
But doing so prevents the skin from getting crispy
and achieving that deep, gorgeous brown color that
makes your turkey look like something off the cover of
Food and Wine magazine.
While the
wine was lost on me (not a huge fan), the delicious
food made a memorable impression
and showed just how creative one can be cooking with lean beef
and fresh, seasonal produce.
The crêpes I
made above for this month's ratio rally event were filled with braised duck, fennel
and chestnuts, thanks to a few minor adaptions from this recipe on
Food and Wine, Duck Two Ways: with crêpes
and fennel compote.
While it's not necessary to have
wine with every meal,
making a good meal is key to enjoying any
wine and food pairing.
We had some serious comfort
