There are many versions of
Aloo Gobi, perhaps as many as there are chefs in the world, but the inspiration
for this one came from Aarti Sequeira.
Aloo Gobi, a standard of Indian cuisine, has had my attention
for a while now, a combination of cauliflower, potatoes, sometimes peas, cooked together with a piquant combination of a chef's favored spices, garam masala.
I once concocted a dish with these two and called it «Chola Gobi» [Indian terms
for Chickpeas and Cauliflower], a twist off the more traditional
Aloo Gobi and it turned out very very tasty.
I used 400 gm each as I made
aloo gobi
for two meals.
Aloo is Indian
for «potato».
You can cut down on the prep time by doing a bit of multi-tasking by soaking the dates and tamarind
for chutney while making the
aloo masala.
The basic recipe
for this is pretty similar to that
for basic
aloo mutter.
