of a base, but it can be made quite a bit stronger by exposing it to heat (300F / 150C
for an hour), which turns it (sodium
bicarbonate) into sodium carbonate.
I've read about gelatin in bread and often add
bicarbonate of soda but I need to get on and try the gelatin... it is so good
for you too if you get the grass fed stuff not the horrid stuff in the shops!

soda bread recipe, but I have just tried one from River Cottage website which I made with just 500g
of white bread flour, 2 tsp
of bicarbonate of soda, 1 teaspoon
of fine sea salt, and 400 ml
of soured milk by adding 2 1/2 tbs
of pure lemon juice to 400 mil
of milk, whisking in and standing
for 20 min.
I have made this cake
for many years and it's easy and always a success, it works very well with gluten free flour and gluten free
bicarbonate of soda.
