Rice and flax
milks are indeed thinner / less creamy than almond and soy
milks, but they would work just fine
in this
recipe, as would hemp, oat, hazelnut, or
coconut (the stuff designed
for drinking, not the canned kind, which has way more fat, and thickens or partially hardens
in the fridge)
milks.
That whipped ganache
recipe was a game - changer
for me when I discovered it, as like you, whipping
coconut milk can be an exercise
in frustration!
Question
for you... When the
recipe calls
for can of
coconut milk, are you referring to the kind you buy
in the dairy isle or the actual canned kind?
This is a great
recipe for crepes, definitely not pancakes.A bit chewy, but good.The only thing I replaced was the soy
milk with
coconut milk.I'm actually happy they came out as crepes (haven't had any
in over 8 years).

in on all of the tips and tricks I've learned so that you can develop your own
recipe, or adapt a
recipe that currently includes cow's
milk.
often i will add
in full fat
coconut cream or some kinda
coconut milk wih the stevia to make up
for the honey / maple
in many paleo
recipes (
for now while i'm on a parasite and candida cleanse, but hey maybe forever)!
The only thing I changed
in the
recipe is that I substituted
coconut milk and
coconut sugar
for the
milk and white sugar, and they turned out great!
Even though we are usually swimming
in fresh cow
milk, I still enjoy canned
coconut milk on occasion
for smoothies or
recipes like my Healthy No - Bake Cookies.
Luckily there is plenty of
coconut milk in the Bahamas which is the base
for so many delicious Thai
recipes.
Coconut sugar and sucanat both work excellent
in this
recipe (but once you add the warm
milk mixture, you'll want to let it sit
for ~ 10 minutes so the liquid works to dissolve the sugar).

recipe just subsituted — the very vanilla soymilk
for the almond
milk, and
coconut spread
for the oil, warm it to melt.
but, one of my coworkers insists that she has seen many
recipes for vegan ice creams that use the cream from a couple refrigerated cans of
coconut milk and that is what you have listed
in your
recipe.
It can be used
in place of
coconut milk in recipes by diluting it with water, or you can use it
for dishes and desserts that require thick, heavy cream (which you'll see below).
Oh and if you're wondering how this ice cream is dairy - free, well I used canned
coconut milk which is just as rich and creamy as heavy cream that is typically called
for in ice cream
recipes.
I now have an updated version of this
recipe available
in my book (see my sidebar
for details) using all the
coconut milk and some arrowroot powder instead, it's not raw though.
* 1 1/4 pounds boneless, skinless fish fillets (any variety), at least 1 inch thick (I used wild Alaskan sablefish aka black cod that I purchased from Vital Choice) * 1 tablespoon organic
coconut oil (the
recipe calls
for grapeseed oil but I prefer
coconut oil) * 1/2 medium red onion, finely chopped * 1 teaspoon grated fresh ginger * 2 garlic cloves, minced or pressed * 1 pint grape tomatoes, cut

in favor of using a fresh chile pepper) * 1 1/2 cups

coconut milk) * handful of fresh basil, preferable Thai basil, minced (note that this does not appear
in the original
recipe) * 1 tablespoon finely chopped chives (I left these out and added a minced hot chile pepper instead)
Honestly there is not an equally good replacement
for full fat
coconut milk in recipes.
The
recipe is basically a play on ganache: heat up a high fat liquid (usually heavy cream, but
in this case
coconut milk), pour it over chocolate, let it sit
for a couple minutes, whisk, and bam.
In lieu of using cream for this recipe, we're using coconut milk, then adding loads of flavor by adding some marsala wine, plenty of garlic, a pinch of Italian seasoning, lots of sun - dried tomatoes (packed in oil), and a wee bit of Parmesan chees
