As I continue my venture into gluten - and -
grain free
cooking, as well as avoiding refined sugars, I have been using more coconut products in my baked goods — the oil is great
for flaky scones,
for instance, and the flour makes a good substitute
for grain - based flours.
What makes this method smart is that you'll
cook the
grains in the same pot but add them at different intervals to account
for size differences.
For a no wheat, milk, eggs, corn, soy, yeast, sugar,
grain and gluten comprehensive recipe book (all meals, snacks, desserts), I highly recommend «Allergy
Cooking With Ease» by Nicolette Dumke.
Add grated onion - tomato, crushed garlic - ginger, turmeric powder, sprouted lentils, beans,
grain and about 3 cups of water in a pressure
cooker and
cook for 5 - 6 whistles.
But to eat whole
grains, we have to
cook them at 100 degree
for 1 - 2 hours in some cases and as I have understood, freshly grinding whole
grains and
cooking them is not considered a whole food anymore as they increase blood sugar in this form.

I'm pretty new to
cooking (well at least the healthy, whole
grains, good
for you and good tasting food) and I just wanted to say what an inspiration your food is to me.
Of course, if you don't want to wait
for it to
cook (it does take a bit longer) or can't find it, quinoa is usually my second choice
for a
grain!
Don't be tempted to substitute a long
grain rice like basmati
for the Arborio, and don't rinse the rice before
cooking to ensure a creamy rice.
Prep Ahead Tip: This recipe is super quick to come together, but if you're pressed
for time the
grains can be
cooked ahead of time.
