Cooking Light, May 2006 This is the second time I've made this.
Prep: Finely chop 1 medium shallot, 2 — 3 T / Zest one lemon and chop finely / Cut lemon in half
for squeezing / Measure 1/4 C white wine (optional) / 2 T butter / 1 t salt and pepper or lemon pepper to taste / Measure 2 C Arborio rice / Bring 6 cups of liquid to a
light simmer — this can be plain water, any broth, clam juice, tomato juice, or a combination / Pieces of seafood like clams, halibut, salmon, shrimp — which are optional, can be chopped into bite - sized pieces in advance, or while rice is
cooking / Add pieces of almost any vegetable — some will need to be par - boiled or sautéed before adding about mid-way through
cooking time / I like to add rehydrated wild mushrooms and their broth, chopped kale or chard, thin spears of asparagus when in season.

Cook over high heat, without stirring
for 10 — 15 minutes or until the mixture becomes a
light golden - yellow caramel.
By the way, the recent
Cooking Light has a recipe
for a Sri Lankan curry.
Cook for 8 - 10 minutes until thoroughly
light - browned.
Cook for 6 - 8 minutes, stirring often, until the moisture is evaporated and the cauliflower is
light and fluffy.
Once it starts to
cook flip to the other side and
cook for few minutes or until
light golden in color and lightly crispy in texture.
Bake
for 22 -25 minutes, until
light golden brown, but still slightly under
cooked in the center.
3/4 cup rolled oats (quick -
cooking or old - fashioned will work; instant might get a little dusty) 1/4 cup shredded or flaked unsweetened coconut 2 tablespoons pepitas, or another nut or seed of your choice 1/4 cup dark or
light brown sugar (

Add the garlic and

Cooking Light recipe as well, it does give more than 16 servings (so about 1 teaspoon butter per serving and a tablespoon or so of sugar).
Bring to a
light boil and
cook for several minutes until ingredients are heated through and alcohol in wine is
cooked off.
