While my son may be interested in straight forward
pumpkin pie, I'm ready
for a
little extra fun.
My sweet husband John has real soft spot
for pumpkin bread, so as a
little surprise I made a cake version of his favorite fall - time treat.
Can we hold off on the
pumpkin spice and butternut squash
for a
little bit longer?
I'd had some roasted
pumpkin in the fridge
for about a week and it had dried out a
little, but this didn't seem to matter!
I too am not a huge
pumpkin pie fan —
for me, it's about the texture, or rather, the fact that
pumpkin pie has very
little texture.
I did make a few substitutions tho - I substituted the brown sugar
for agave, and the batter was still a
little thin
for me, so I added a
little pumpkin bread mix.
For a snack, I tossed my pumpkin's seeds with olive oil and a little za'atar and roasted them for about 15 minut

Pumpkin Pecan Pie Muffins are
little sweet
for a muffin.
Food Babe, bless her busy
little heart, seems to be missing this major point in blasting Starbucks
for not including
pumpkin in this beverage.
What I've changed
for this recipe is to roll out the dough but to then use a
little pumpkin shaped cookie cutter to create individual pasta shapes.
For a
little bit of flavor I add some apple juice and vanilla extract to the liquid, and some
pumpkin pie spice.

for #SundaySupper, so you know what that means — apples,
pumpkins pears, squash, and all sorts of comfort food as the air starts to get a
little crisp.
We combine that with said chopped vegetables, a few spices, a
little broth and a healthy splash of coconut milk
for a super creamy and satisfying
pumpkin soup.
So,
for the cake itself, I actually adapted Izy Hossack's Salted Caramel
Pumpkin Spice Cake to suit my vegan diet, and I amped up the flavours a
little with the addition of the caramelly -LSB-...]
