noodle soup which is easy and very flavourful — perfect
for a mid-week dinner.
The miso dressing is a great option if you're looking
for a nut - free
noodle dressing, and the Thai
peanut dressing is perfect if you are a big fan of creamy
peanut or almond butter.
I went
for extra protein with the

I used: powdered lemongrass
for the bottled, onions
for the shallots, Penzey's sweet curry powder plus 1 tsp Chinese chile garlic paste
for the red curry paste, three times as much garlic, a full tablespoon of sugar (brown), mung bean
noodles for the rice vermicelli, green beans (par - cooked in the microwave then salted and blistered in the wok)
for the peas, twice as much cilantro, an equal amount of chopped scallions, and an equal amount of chopped
peanuts as a garnish.
It's like
peanut sauce's slightly mellower, sweeter cousin, and it makes
for a seriously decadent and delicious soba
noodle salad, coating every crispy veggie and
noodle to slurpable perfection.
