Not only can it can be used as a spread inside sandwiches and wraps, but it's a blank canvas for dozens of different flavors — roasted garlic, red pepper, artichoke, sun - dried tomatoes, basil pesto, roasted beet — you name it.

I threw in lots of different veggies, some hummus, a little lemon tahini dressing, and some leftover Roasted Garlic Artichoke Spread with Fresh Oregano (recipe from E, D&BV) that I made for book club last night.

For this Mediterranean - inspired roast beef sandwich, I started with store - bought garlic naan and layered on McKenzie roast beef, horseradish, cheese, roasted red pepper, grilled artichoke, and fresh spinach.

The salad below is a pretty typical lunch for me: mixed greens, beets, fennel, leftover grilled artichokes, cherry tomatoes, carrots, cucumber, olives, avocado, and roasted rock shrimp.

Dinner: Roasted Chicken and Jerusalem Artichokes (a.k.a Sunchokes, I hear they're a good substitute for potatoes) from Martha Stewart, Roasted Green Beans, Salad

I would order roasted fish with peppers, artichokes, and lentils and a glass of red wine for dessert.
