Many recipes
for royal icing call for raw egg whites - this make a lot of people including myself nervous and unfortunately pasteurized egg whites don't whip up the way pasteurized egg whites do.
For Royal Icing with Meringue Powder: In the bowl of your electric mixer (or with a hand mixer), beat the sugar and meringue powder until combined.
I prefer the taste of royal icing made with egg whites, but if you are concerned about the risk of salmonella, I have also included a recipe
for royal icing using meringue powder.
I want you to try it again, it is really easy, you just have to make sure you have the right consistency
for the royal icing.
After lots of faffing around with «aquafaba»
for royal icing recipes, I've settled on the much easier recipe from Free From Fairy which uses glycerine in place of the egg white (be aware many varieties of icing sugar have «may contain egg» warnings).
FOR THE ROYAL ICING: 2 cups confectioners» sugar 1 to 2 tablespoons plain soy milk.
For the royal icing: Using an electric mixer or by hand, sift sugar into a bowl and add 1 tablespoon soy milk.
Proportions
for the royal icing above are best for using with liquid food colourings (don't overuse them, though, or they will make your icing a bit too liquid; — RRB --RRB-.
In my opinion this icing does not taste that good, and I usually like to use the Confectioners Icing... Recipe

While I used the cookie base recipe from the book, I actually switched the recipe a bit to include a lemon curd and a meringue topping (the original recipe doesn't call
