Tomatoes are generally available
for purchase year - round, though they taste freshest and contain more vitamins when consumed in
season, which is typically during the summer months.
A long illness and an even longer recovery kept me out of my vegetable gardens
for all of August and most of September: the height of heirloom
tomato season.

This dish is extra wonderful because you can use

For lunch I made Homemade
Tomato Sauce and mixed them with the remaining
seasoned minced chicken from Coconut Lemonade Custard Chicken to make Jambalaya Inspired Minced Chicken.
Add the chicken, additional
seasoning if desired, beans and
tomato sauce and simmer
for 10 - 15 minutes over medium heat.
Add the carrots, pepper, broccoli, and zucchini and cook
for a few minutes, then add the
tomatoes, spices and
season with salt and pepper.
Cherry
tomatoes are a great choice
for summer - sweet flavor once
tomatoes go out of
season.
Vegetables (corn, peas,
tomatoes)- I like to use fresh corn (when in
season) and keep it
for the rest of the year in our freezer, so I can have fresh corn all year long.
Top a piece of matza with
tomato sauce or vegan pesto, add your choice of thinly sliced veggies, olives and
seasonings, and drizzle with olive oil before baking

seasoning is an improved version of the formula found in Top Secret Restaurant Recipes 2since
tomato soup mix is hard to find these days.
For the sauce, mix the pickled relish,
tomato sauce, mayonnaise, chopped dill, French shallots and smoked paprika together in a bowl,
season with salt and pepper.
Oh to be a green
tomato during pumpkin
season... or anything else
for that matter.
So try this sheet pan chicken and potatoes recipe this Sunday — it is simply
seasoned with spices,
tomato and onion and roasted in the oven
for 90 minutes.
A recipe

seasoning such as basil, oregano, salt and pepper OR your favourite dairy free Margherita sauce fresh herbs
