For my shish kabobs I used
sweet peppers, leeks (basically a big, mild
green onion) and Portabello mushrooms (we LOVE grilled Portabellos).

Here's the formula I've discovered
for making salads that I don't hate: some kind of
greens, preferably fresh from the farm + something
sweet (usually fruit) + something crunchy (often nuts) + something creamy like avocado or cheese + plenty of pops of color + a flavorful dressing that's just tart enough.
At the time, I was coming home from work to an always empty house, laying on the floor
for an hour to re-calibrate from my day, working myself into a 30 minute or so run, and then reading a couple food blogs over dinner (usually a
sweet potato, roasted during that run, with black beans, salsa, and a pile of
greens), working another couple hours just to survive the next school day, and falling into bed into a deep and dreamless sleep before my alarm clock wrenched me out and up and into another day that was much the same.
There are so many
greens in here (plus that cucumber) you're practically eating a salad
for breakfast, plus since the only fruit in here is apple, you won't get that crazy blood sugar spike that bananas and other uber
sweet fruits can bring.
I love savoury pancakes too — we often have them
sweet for breakfast but I now think I want some with cheese sauce — sounds delicious — the
green pancakes sound like fun — I would try the peanut sauce if not
for the peanut allergy in the family
This might be the epitome of health in a bowl — I mean,
sweet potatoes, chickpeas, AND those infamously good -
for - you dark leafy
greens?
I think the
sweet oniony chunks made up
for the raisins and the
green onions, although I can't wait to try it the proper way soon.
