For those interested, I just did a 1:1 replacement of molasses
for yacon syrup and they turned out tasty.
For the oil I used warm coconut oil, then honey for the agave, and molasses
for the yacon syrup.
I was just hankering for some ginger snaps, and I know how to make SCD subs for most of Elana's common ingredients, but I would never have known what to do
for the Yacon syrup.
As I mentioned above, I had to sub dark agave syrup
for the yacon syrup due to lack of availability, and it worked just fine.
I haven't tried it myself, but you might be able to sub the brown rice syrup
for yacon syrup or coconut nectar.

Also, you should not use
yacon syrup for baking, as the structure of FOS breaks down at high temperatures (over 120 °C / 248 °F).
Yacon syrup is a good alternative to sugar but may not be suitable
for a very low - carb diet, as it still contains carbs.
While there are no large scale studies on this, I am not too focussed on promoting
Yacon syrup for its weight loss ability.
