It doesn't seem like much, but a succession of such increases over the past four decades has given Canada some of the highest prices in the world
for cheese,
yogurt and other products made from industrial milk.
In early 2017, the Canadian dairy industry created a new class of milk prices
for so - called ultrafiltered milk, which is used to make
cheese,
yogurt and ice cream.
Price Setting: Milk prices (
for consumers as well as processors of butter,
cheese,
yogurt,
and ice cream) are set by the dairy farmers themselves — based on cost of production plus what they determine is the appropriate profit.
