zucchini, thinly sliced 1 medium summer squash, thinly sliced 1 orange bell pepper, thinly sliced and deseeded 1 red bell pepper, thinly sliced and deseeded 1 tablespoon olive oil plus more

hummus 1 handful arugula 1/4 cup crumbled feta cheese
I plated my
Zucchini Hummus Roll Ups in the bowl and tucked a few herbs in here and there
for garnish.
For quick dinners, I make a kale salad and top it with some vegetables and
hummus, or I recently have been doing spiralized
zucchini noodles and top that with some chickpeas and avocado.
I made cabbage wraps with
zucchini hummus, shredded veggies and hemp seeds
for lunch, so delicious, I haven't made cabbage wraps in a while!
I need to do some more prep work
for the week ahead, I am off tomorrow as well so I have raw almond butter,
zucchini hummus and vegetable soup on the prep schedule!!
I found out their idea
for this summer number was inspired from Maebell's Grilled
Zucchini Hummus Wrap recipe.
4 large flour tortillas (try spinach or sun - dried tomato
for some color) 1 bag of pre-washed lettuce or spinach Your favorite veggies, washed and sliced or shredded (e.g., mushrooms, carrots, celery, radishes, tomatoes, corn, beets,
zucchini, artichoke hearts, etc.) A tub of your favorite
hummus 1 package Tofurky deli slices (optional)
The
hummus is made from chickpeas, which help you feel full and satisfied all afternoon.They even manage to squeeze in
zucchini and eggplant
for good measure.

for healthy snacking or appetizers!

Zucchini doesn't just make
for great veggie chips, they have a flavor profile that make them a believable substitute
for hummus.
Usually a soup, stirfry, pasta, salad, meatballs, whole chicken, or something of the like — cut up carrots, celery,
zucchini, tomatoes, cucumber etc into 5 containers
for morning snacks
for the week (usually 1 - 2 cups)-- Measure 1/4 cups of nuts like almonds, cashews, peanuts, pistachios, into 5 containers
for afternoon snacks
for the week — prepare one or two easy sauces in my food processor to use
for snacks or in salads i.e.
hummus, artichoke dip, pesto, etc
