Medallions of beef with mushrooms and marsala and creme
fraiche sauce INGREDIENTS: handful of fresh thyme, beef fillets (I used schnitzel fillets but they weren't tender enough, I think I'd just go for some nice pieces of steak next time), olive oil, 500g swiss brown mushrooms chopped, sea salt, 2 french shallots finely chopped, 1 clove garlic peeled and finely chopped, 1 wineglass Marsala, 4 tablespoons creme fraiche (I used lactose - free cream).
These Roasted Cabbage Steaks are topped with crispy bacon and drizzled with a garlicky creme
fraiche sauce.

It is normally made with creme
fraiche as the
sauce, but I lightened it up by using a mixture of light sour cream and creme
fraiche.
While I often eat these just as they are, they make a very nice plated dessert that you can top with fresh fruit and whipped cream, creme
fraiche, a fruit
sauce, a chocolate
sauce, an ice cream, or even a sorbet.
You can even subsitute creme
fraiche with this Bechamel
sauce recipe when making quiches!
Warm the cream, crème
fraiche and lemon juice in a
sauce pot.
