One way to create soft and light
baked goods, but still keep the added health benefits of

free yogurt or sour cream in addition to dairy -
free milk.
I certainly am not, but gluten
free baking will make you a
better baker.
Unlike many gluten -
free baked goods, these muffins are moist and the crumble topping makes the muffins sticky (in a
good way).
I
bake absolutely nothing that can be called diabetic friendly,
well except for these Pumpkin Cookies I made last year for my friend Carolyn and this beautiful Cranberry Cheesecake which happens to be both sugar and gluten
free.

free baking is often a process of trial and error, with minor adjustments necessary to get the final product to turn out
well.
But since the Gluten
Free Ratio Rally was coming up, with the theme around quick breads and muffins, I thought I would tinker with the ratio and come up with a decent muffin worth selling for a
good cause (the
bake sale total, by the way, is currently at $ 124,120.38 which is amazing).

free baking cookbooks, as
well as maybe some all around books that include a bit of both.
It made me giddy with excitement — I always like to see gluten
free baking experiments turn out
well, and I've been having much more consistent results ever since I started really thinking about the ratios and weights of the ingredients and trying to approach my recipe development techniques in a more systematic fashion.
There's nothing
better than waking up to the smell of gluten
free cinnamon rolls
baking in the oven.
It is not considered a grain, and is useful in gluten

well as Paleo

It meant I could look up recipes and create my own version like I usually did with everything I cooked, rather than having to say a prayer to the gluten

Ground almonds is one of my favourite gluten
free flours to
bake with — it's so versatile and has the a subtle nutty taste which I think works
well with many different recipes.
ROLLING TIP: Because the dough is gluten
free and a rolling pin can apply uneven pressure resulting in uneven thickness, I discovered a
better and easier method of flattening these nut pulp cracker doughs for drying /
baking: (1) Using your hands, shape the dough into a compact smooth ball.
THE FOOD So far I have tried the baguettes (they rival the Gluten
Free Baking and Living ones — very
good), the dark chocolate brownie (almost more cakey than a brownie, but whatevs, it's delicious), the cinnamon swirl (YUM).
What's
better than a fresh -
baked pan of gluten -
free brownies?
They are
baked, not fried, as
well as gluten
free.
Out of the grain
free breads I have experimented with in
baking, this one is definately the
best.

The brownies were
baked in a 9 x 13
baking pan which made them a thinner brownie which I really liked and I topped them them with melted chocolate chips as
well as crushed gluten
free candy canes.
