By late 2003, Shepard was cooking 100 percent gluten - free, baking daily for her two kids (ages 5 1/2 and 2) and her pie - loving husband.

Next, my first attempt at almond flour baking with carried with in a very strong aftertaste that I have (thankfully) not experienced since then, and a paleo chocolate cake I made last winter than contained an obscene amount of eggs and had the consistency of a quiche... What I am trying to say is that cake is not quite as universally beloved in the grain free world... at least not by bakers.

Substitutions / additions: Pamela's gluten - free baking mix for the almond flour, cut the spices and added some ground ginger, cut the baking soda by 1/2 --- and they're spot on.

Frustrated by gluten - free breads that lacked in taste and nutritional value, Christi, her husband, Josh, and their friend and Master Baker, Ed Miknevicius, set out to bake breads that were free from gluten and other allergens, but held the taste, texture and feeling of «real» bread.
