It's VERY important to weigh out your flour in gluten
free baking so as to get accuracy!
Because of my husband's dietary restrictions, I used agave instead of sucanat, so then I had to exchange the grape seed oil for coconut oil to make up for the extra liquid, I also added lemon extract because I love it and I did add a little extra gluten free flour — it's in the oven now and I'm not sure how it will be but this I'm early in gluten
free baking so I'm hopeful...
Living in Mexico City does make gluten

THE FOOD
So far I have tried the baguettes (they rival the Gluten
Free Baking and Living ones — very good), the dark chocolate brownie (almost more cakey than a brownie, but whatevs, it's delicious), the cinnamon swirl (YUM).
Being the only Coeliac / gluten
free eater who was attending, I offered to
bake a cake for the charity event

Rather than making a disappointing imitation of a
baked treat that relies on wheat flour, I prefer naturally gluten -
free desserts, and this intense chocolate mousse topped with whipped cream and a sparkling cranberry and crystallized ginger compote was
so pretty and indulgent, everyone wanted seconds.
I have found through experimentation that you just don't need 3 - 4 flours for gluten -
free baking, which is
so wonderful.
Other than being really grateful for friends that love to eat and cook similarly to me, and for those that go out of their way to accommodate my gluten and dairy -
free needs by learning how to cook and / or
bake in this way just
so I can be included, I'm learning that being more assertive, giving, and willing to educate others, both about food intolerances and allergies, and about the mental health aspects that some of us bring to eating, are really important.
