In nutshell, these vegetarian enchiladas are loaded with delicious flavors, veggies, are vegan (when topped with vegan
cheese and cream), and also gluten
free because I have used gluten
free white corn tortillas.
I used cheddar in this recipe
because it goes so well with jalapeno and bacon, but feel
free to replace it with your favorite
cheese: swiss, pepper jack, etc..
Since the soup is still fat
free at this point, I'll usually top it with a little cheddar
cheese because I deserve it (freeze - dried
cheese would work for this too).
I was expecting to like this a whole lot more
because I have enjoyed Amy's Gluten
Free Vegetable Lasagna and Bean &
Cheese Burrito, both of which seem much better priced.
So, I thought about making these low - carb cauliflower bites
because they are all what we are looking for, which means they are low - carb, gluten -
free, easy to make... And on top of that, you will find the ingredients are simples to find in any food store such as cauliflower, Parmesan and mozzarella
cheese, bacon, eggs, tomatoes and avocado.
Made this tonight — using medium enchilada sauce so it would a little spicy and a mix of fat
free amd reduced fat shredded
cheese (
because that's what we had in the fridge!)
The frosting is not very sweet
because I love the tang of cream
cheese — feel
free to add more sugar if you think I'm crazy.
Nate and I both went straight for my chili at the church event
because we knew it was delicious and didn't want to take our chances Plus with only 1/2 cup of
cheese and 1/2 cup of sour cream (and I used fat
free) mixed in we knew it wouldn't be too unhealthy either.
This soup is naturally gluten -
free and vegan, but of course I ruin all that with croutons and Parmegiano Reggiano

I planned on using low fat Ricotta in this dish
because I'm generally not a fan of fat
free cheeses, but my grocery store was out.
The shredded mozzarella is really only there
because (if that bowl looks familiar to you...) I couldn't find any of my bowls after I moved, and I didn't want it to be empty, but feel
free to add shredded
cheese to your chili!
I'm actually eating a grilled ham and
