I have made something similar using crushed Gluten
Free Corn Flakes which added a crunchiness.
For the coating you could use any gluten free dairy
free corn flakes as long as you pick one that is not very highly sweetened.
1 cup Gluten Free bread crumbs (I like Corn Tortilla crumbs) 1/2 cup rice flour (other flours can be substituted like garbanzo bean flour) You can also add crushed Gluten
Free corn flakes to the bread crumbs.
Also, since I cook for a Celiac sufferer, I make it gluten free by simply replacing the Special K with gluten -
free corn flakes, which changes the consistency a little bit, but keeps the recipe well within the realm of «delicious».
