free crust using this recipe.

used buckwheat flour but you could
use brown rice or whatever other gluten -
free grain flour you have kicking about and yes the
crust could definitely be
used for other fruit (or chocolate!)
It's the exact same cassava flour
crust used in this gluten -
free quiche lorraine with leeks, but the tomato galette was so good that I decided it merited its own post.
For the
crust, I
used Alton Brown's pie
crust recipe, substituting all - purpose gluten -
free flour for the regular.
But if you really want to make it
free of refined sugar, you can omit the Oreo - based
crust and
use the following recipe for a 9 - inch fluted tart pan: 1 1/2 cups almond flour, 1/3 cup unsweetened cocoa powder, 1/4 cup raw agave syrup or coconut sugar, 3 tablespoons coconut oil, and 1/4 tsp sea salt.

First, prepare your favorite pie
crust recipe. As mentioned above, I used Alton Brown's pie
crust recipe substituting gluten -
free all - purpose flour for the regular and
using vegetable shortening instead of lard.
Fortunately most of the fillings are indeed gluten
free, so if you
use a GF
crust you're good to go.

used a Wholly Wholesome gluten
free crust which, though a slight compromise food, includes ingredients I could and would
use in my own kitchen (though I don't normally
use xanthan gum).

use your favorite recipe... hopefully one that's not made with shortening as this is filled with hydrogenated oils / trans - fats.
