flours that you use regularly, and when you see a recipe with someone else's gluten
free flour mix, you
do your best to make
do with what you own rather than going out to spend even more money at the store — cause let's face it — gluten
free ingredients often bring a whole new definition to pricey groceries.
I don't use gluten -
free mixes because the majority of those
mixes are made of starches and white rice
flour, which don't have any nutritional value.

My oldest doesn't eat gluten or dairy so this was perfect and I had a box of King Arthur
flour chocolate cake
mix that was gluten
free.
I've made these twice — once at work with a gluten -
free flour mix and rice bran oil instead of butter (we didn't have any butter in stock), and once the regular way, at home.
I am grain -
free and have tried Paleo - friendly baking a few times with
mixed successes... I
do respect people who've been able to perfect their recipes without grain
flours!
Gluten
free baking can be tricky, especially if you want to eat whole foods and not to use any
flour mixes that might contain stuff you don't know what they are.
Almond
flour won't work, but maybe if you have a gluten
free flour mix it would work (though I didn't try).
And if gluten isn't an issue or you don't want to use all the crazy
flours, you can make this cake with regular all purpose
flour or your favorite all purpose gluten
free flour mix, substituting 1:1 ratio with all the gluten
free flours (1 1/4 cups or 175 grams all purpose for the dark chocolate, 2 cups or 280 grams all purpose for the butterscotch and vanilla bean cakes).
Note that the gluten
free pancakes don't come out as well with all gluten
free flour mixes.
I've
done several rounds of this with the all - purpose gluten
free flour mix from Bob's Red Mill.
Didn't have zucchinis, but made these with carrots instead and a gluten
free flour mix, and they turned out delicious!

I
do sometimes eat rice and corn but I was not able to really use most gluten -
free flours and
flour mixes.
I don't kntw how this will turn out, due to using coconut
flour, however, to make my daughter's meals dairy
free, when I substitute eggs, I use a flax egg (1 Tbsp flax seed w / 3 Tbsp water for each egg called for in a recipe,
mix and set in fridge for 15 min b4 using).
I didn't have all the ingredients so substituted kefir cheese for the butter and gluten
free flour mix for the
flour.
Now, obviously this recipe isn't from the book, BUT I
did use their all purpose gluten -
free flour mix here and it worked out beautifully.
You don't have to make these cookies with that
flour (I offer alternatives in the recipe), but it is a genius gluten -
free mix that's really worth a try.
I don't have time right now to respond to each of you so here is a quick synopsis: So far I have a
mix of recipes, cupcakes too, some recipes contain nuts, most don't, none use bean
flours (don't like them), most are potato -
free - though I have found potato starch very useful in some recipes, lots are sugar -
free - but not all.

You could use a white gluten -
free flour mix instead of tapioca, but I don't generally use these as they contain potato and grains.
It's such a beautiful wholesome
flour, so full of flavour, and unlike many other gluten -
free flour mixes, the bread it produces
does not dry out but is moist and great for sandwiches and toast alike, the day you bake it and the next day too.
You could try a gluten -
free baking
mix, but I don't think coconut
flour alone would work.
My
flour mix (since I'm grain
free): 100 grams of quinoa
flour, 50 grams of amaranth
flour, 20 grams of buckwheat
flour (it aids in the gel effect, as
does the amaranth, but I don't like the grittiness of the buckwheat
flour).
Substitutions: Instead of using butter milk (no one makes a lactose -
free buttermilk and even if they
did I wouldn't pay the money when I can
do this:), I
mixed 1 cup of milk with 1 tablespoon of lemon juice and let the
mix set while I made up the
flour blend (BTW this is a great trick for making buttermilk pancakes as well).
Some use the Betty Crocker gluten
free mixes, which I expected, however, many
do not and you can use the gluten
free flours and starches listed in the recipe.
I
do nt use this
flour mix for bread, pizza crust, breadsticks, etc. as they require specific
flour combinations for the best results (see Cooking Gluten -
Free!
I don't recommend using a gluten
free flour mix in this recipe.
If you don't want to
mix such a large
mix of gluten -
free flour, halve the recipe.

free flour mixes or dairy / egg replacers for this cake.
