The eggs are definitely necessary when using coconut flour (one of my least favorite things about baking with coconut flour), but I'm sure if you used regular gluten -
free flour mix only 2 eggs would be sufficient — maybe even just a whole mashed banana.

I ran out of gluten -
free mix after 1 cup so I added 1/2 cup brown rice

only tell a little bit that it's gritty but I was also looking for the grittiness since I knew I put it in there.

free flour mix in our local Sprouts Market.
