The
recipes in this book don't
call for «all - purpose» gluten -
free flour but have been developed with a small selection of individual flours, each chosen
for their unique properties.
I also use boneless and skinless chicken thighs rather than bone - in as the
recipe calls for - this is really only because these are the only
free - range, organic chicken thighs I can readily find.
If you would like to use another flour, please make sure it is a whole grain flour (gluten -
free flours could work but you will need more of it
called for in this
recipe).
Feel
free to use less olive oil and butter than the
