I've tweaked the classic recipe to make it refined sugar
free friendly (unless you count the little bit in the Weetbix) substituting dates in the slice for the usual table sugar and
rice malt in the butter icing.
Sugar -
free means fructose -
free here, as this recipe contains
rice malt syrup.
I used a gluten
free muesli, coconut milk, berries and
rice malt syrup to make the bars.
These were listed as gluten
free, however
Rice Krispies have
malt in them, making them not gluten
free.
It's also fructose
free and vegan - friendly if you make it with
rice malt syrup (sometimes called brown
rice syrup), and you don't add any fruit.
If you'd like to glaze the buns, melt 2 tbsp
rice malt syrup (or sugar -
free jam) and then use a pastry brush to glaze the top of the buns.
Unlike honey and maple syrup,
rice malt syrup is virtually fructose -
free.
