If you don't want to use a packaged
pie crust, you can make a few from scratch ahead of time and
freeze them and same goes for your
pie filling.
We
freeze the tart shell because it needs to be pre baked, only I don't want to fuss and
do the usual covering the
crust with parchment paper and filling it with
pie weights.
All you need to
do is dump all of the ingredients into a food processor, blend until smooth, dump into a
pie crust and
freeze.
(I
did also use
frozen pie crusts).
The filling is really fairly simple, and if you use a
frozen pie crust like I
did (insert - surprised - emoji - face - here), it's as easy as 1 -2-3.
If using a
frozen pie crust, you
do not need to blind bake it.
It seems most used a
frozen pie shell (one
did use her own
pie crust recipe).
I should also note that never in my life before going gluten - free could I imagine that a
frozen crust could rival anything I might make my self but these ones
do rival any homemade
pie crust I've had so far (but I'm still searching).
