This Overnight Eggnog French Toast Casserole was inspired by a non-vegan version I made years ago.

If you have extra orange extract, add it to your french toast — I use it by the gallons.!

This is overlong now so I won't go into great detail about the breakfast menu — rather bleak by my standards but at least it is free and many of our kids do partake of a choice between a serving of cereal, a whole wheat «donut hole» or pre-packaged breakfast burrito / 2 french toast sticks / or 4 mini pancakes.

The breakfast continues by consuming a bowl of grits, three slices of French toast with powder sugar and three chocolate chip pancakes, which is about 4000 calories in total.

This recipe is easy to make vegan if you are egg - free, can be gluten - free simply by using a good - quality gluten - free bread (and sometimes you'll want to warm it up before you soak it — if you keep it in the refrigerator like me it needs to soften up a bit before it can absorb your French Toast batter) and tastes delicious.

I'm particularly intrigued by the french toast recipe.
