the fresh flavors of pumpkin and butternut squash, I savor every moment of my favorite season.

We love to bring back some mementos in the way
of a few
pumpkins for decorations, as well as
fresh - picked apples and other deliciously flavorful edibles to feast on and enjoy for the
flavor of the season.
(It could definitely be because I used canned instead
of fresh roasted
pumpkin — perhaps the
fresh roasted has more
flavor.)
Like others, I didn't get a strong
pumpkin flavor (used 1.5 cups
of fresh puree), but also like others, I didn't care one bit.
Not only is this
pumpkin cake roll absolutely scrumptious with its tender moist crumb and luscious cream cheese filling which is lightly
flavored with

of honey (I prefer the
flavor), using a flax egg instead
of a chicken egg to reduce calories, a pinch
of baking powder to help it rise and some leftover
fresh pumpkin puree for extra sweetness.
Full
of coconut with a touch
of fresh pumpkin for that seasonal fall
flavor.
This recipe combines the
flavor of fresh - roasted
pumpkin with creamy parsnips, carrots and mushrooms.
