When I'm feeling ambitious, I like to make my own
salsa, and use that instead
of the pre-made,
jarred kind and it tastes SO much more
fresh and flavorful.

jars of my baja
fresh salsa and two
jars of my grilled cherry
salsa!
4 cups
of black rice cooked according to package instructions 4 large carrots, peeled and diced 2 celery stalks, chopped 4 cloves
of garlic, minced Olive oil Leftover black beans (1 cup or so) 1 jalapeno, diced 1 pepper, diced 1/2 cup
of toasted slivered almonds Salt 4 scallions, trimmed and slices 6 - 8 chives, chopped Balsamic vinegar or 1 cup
of fresh or
jarred salsa would also be a great dressing!
We ate some
of the
salsa fresh, and I canned the remainder so I'll have 2
jars to bust open in the dead
of winter.
You can use a
jar of salsa if you don't have time to make
fresh salsa.
Skip the store - bought brand
of salsa and use in season tomatoes to make these
fresh versions and you'll never go back to
jarred.

jar of organic
salsa fresh cilantro (about half
of a store - sized bundle) 2 cloves garlic 1/4 cup
fresh lime juice generous dash
of cayenne
To make this
salsa fermented and probiotic (and also allow it to stay
fresh in the fridge for a longer period
of time — for weeks or months), stir in 1 - 2 tablespoons
of whey to the mix, transfer to a mason
jar and let it sit on the counter for 8 - 12 hours.
I used 6 chicken breasts I had on hand but cooked it in a crock pot for two hours on high with a
jar of salsa (16 oz), 3T lime juice, 1 package
of taco seasoning and 3T
fresh cilantro.
You can buy a 16 ounce container

jarred salsas!

of jarred shelf - stable
salsa (like the kind I found in the cupboard), it's a refrigerated
salsa made from all
fresh ingredients.
Look for
fresh salsa in the refrigerator section
of the grocery (it's usually tastier than the
salsas in
jars).
I also used
fresh salsa from the deli instead
of the
jar stuff.
I didn't have a can
of fire - roasted tomatoes, so I used
fresh tomatoes, some dried chipotle powder, and some liquid - y
jarred salsa to make up for the lack
of extra juice.
