Per serving (2 stacks): 1 cup shredded sweet potato 1/2 avocado 2 large eggs olive

1/4 cup butter or margarine 2 tablespoons ground red New Mexican chile 1 1/2 to 2 pounds fresh yellowtail or red snapper fillets Fresh lime wedges
Ingredients 1 block of ramen noodles 2 cups boiling water 1/4 cup canned full fat coconut milk sriracha to taste (I used about 2 tablespoons) salt to taste half a block of firm tofu a handful of chopped peanuts (roasted and unsalted) 1 scallion, chopped few pinches of fresh cilantro leaves fresh lime wedges
Then slice off a couple
of fresh lime wedges and squeeze the fresh lime juice on top of each tostada.
I love to serve Mexican Lasagna «taco style» by offering a plate full of «fixings» for everyone to add to their plate: shredded lettuce, chopped tomatoes, chopped green or red onion, diced or sliced avocado,
fresh lime wedges.
I garnished ours with a bit of cilantro,
fresh lime wedges and chopped avocado.
Split the mixture between two glasses, crowning each with a shot of vodka, a handful of ice and
a fresh lime wedge.
Add the steamed broccoli and then serve with the fresh cilantro, red pepper flakes, and
fresh lime wedges.
For tacos, serve the saucy barbacoa in tortillas with green and red onion, cilantro leaves, jalapeño slices, and
fresh lime wedges.
Serve the fish with warm roasted black bean cakes, a small spoonful of black beans, and
the fresh lime wedges.

5 Serve the shrimp kebabs and creamy herb dip with jasmine rice, garnishing with
fresh lime wedges, chopped mint or cilantro leaves and extra sea salt.
