little salt, or a simple Caprese salad with
fresh Mozzarella or Burrata cheese.

sliced -2 celery stalks,
sliced -1 small onion,
sliced -4 garlic cloves,
sliced -1 bouquet garni (see note)-1 / 4 cup dry white wine -6 tablespoons butter -1 / 3 cup all purpose flower -8 ounces white mushrooms,

One of my favourite ways to use up these unwanted bread
slices is to make a spiced up crumble with a
little bit of chilli pepper, raisins or dates, maple syrup and some
fresh herbs.
Thinly
slice 1 ball of
fresh mozzarella and add on top of the sauce, then add all the toppings you cut on top of the cheese, season the toppings with some sea salt, add some freshly shredded Manchego cheese on top of the toppings and drizzle a
little extra virgin Spanish olive oil on top
Option: During the summer months, I add
sliced or coarsely chopped cucumber to the salad for a
little fresh, clean, crisp flavor.
Use it to make these
little pancake bites, which are simple but delicious mini muffins.You can leave the pancake bites plain, or scatter each with a teaspoon of chopped

fresh grated nutmeg and chopped dried apricots to the dough and I rolled the chilled dough in chopped pistachios before
slicing.
Serve in brioche buns with a
little light mayonnaise,
fresh lettuce leaves, tomato and avocado
slices and the green goddess dressing.
Slightly sweet from the corn and a
little tang of
fresh cherry tomatoes combined with a
little spice of
sliced red onion and then topped with
fresh and fragrant basil.
