I think it turned out pretty good / interesting, but I will have to see if it's tasty enough to re-test with spelt flour (I live in Korea and don't know what to call it here) and
fresh rosemary when I get back to the states in a few weeks.

Discard
rosemary sprigs
when done and season to taste with a generous pinch of salt and
fresh pepper.
If you don't have access to
fresh rosemary and oregano, no worries — although, of course, it is always preferable to use
fresh, organic herbs whenever possible, the dried «supermarket» version is just as effective
when it comes to lowering blood sugar.

Top with
fresh rosemary sprigs and more grated Parmesan
when serving if desired.
