I am reading this while stuffing my face with some incredibly delicious jumbo medjool
dates that are very
fresh,
sweet and super caramelly.
This creative and completely raw meal will fill you up and satisfy you differently from the
sweeter recipes, with tomatoes,
dates, lime juice, olive oil,
fresh basil, lots of herbs, spiralized zucchini, and raw cashew cheese.
In Galveston Texas I just collected off the ground some
fresh Medjool
dates (still yellow) How does one mature them to become brown and
sweet?
To honor this «Chocolate Bliss» Cocoa, I paired it up with some equally delicious
fresh ingredients to compliment the
sweet tones in the dark cocoa: Walnuts,
Dates, Blueberries, Blood Oranges, Vanilla & of course, my favorite with chocolate = sour lemons.
They will come out as little
sweet spaghetti that you can blend together with a fork with minimum effort, and you will have a creamy paste, just as when using
fresh dates.

fresh hot chile pepper / dried Thai chiles / hot chile sauce to spice it up) * 2 tablespoons Thai fish sauce * 3 medium carrots, peeled if not organic and cut lengthwise into strips a few inches long * 1 red pepper, preferably organic, seeded and thinly sliced lengthwise * green tops from 1 bunch of green onions / scallions, cut to approximately same length as carrots and peppers * 12 oz.
I like
fresh berries for the contrast of
sweet - tart flavor plus they are a great source of Vitamin C or a blend of dried raisins,
dates and figs for their rich almost candy - like natural sweetness.
But I decided to up my brunch game by making two beloved Indian chutneys — the
fresh & spicy green chutney, and the
sweet & tangy
dates chutney.
