I am happy with just roasting or pan
frying in a little olive oil and maybe garlic and herbs but like experimenting with crusts to give it an extra dimension and flavour boost.
These tostadas are pan
fried in a little olive oil but also contain lots of vegetables and cooked shrimp.
While you can roast them in the oven, I prefer to pan
fry them in a little olive oil.
Dust with flour and
fry in a little olive oil for 3 - 4 mins each side.

I decided to oven roast my diced vegetables with just a
