I was craving for eggs so I made 3 over easy
fried eggs with 2
slices of sweet
potatoes, drizzled with some Coconut Aminos.
I
slice up the
potato long ways, into big slabs, cook them in the pan for about 15 - 20 minutes total, then
slice them into
fry shapes.
Deep
fry the
potatoes cut into thin
slices, cook for 10 - 15 minutes on medium - high flame, remove from oil then mix gently with whisked eggs and let the mixture sit for another 10 minutes so that
potatoes can absorb the eggs very well.
Slice the
potatoes into long
fry shaped strips.
These buckwheat sweet
potato burgers are not the big fat, smelly, greasy burgers covered in cheese, bacon,
fried onions all cozied up between two

sliced fruit (versus whole fruit that invariably gets thrown out), some whole grains in the pasta and brownie (although I don't know what percentage), and roasted vs.
fried potatoes.
I took heed of the comments about undercooked
potatoes and par - boiled mine for 5 minutes first, then
sliced quite thinly but they still took about 30 minutes to
fry until tender as it is almost impossible to make sure each piece gets enough time on the base of the pan.
