In fact I messed up a big batch of
mini fritatas yesterday that was quite a loss.

leek fritata casserole (although we always made it without the leeks), the zuchinni - feta casserole (DELICIOUS, I always wanted there to be more of the baked stringy tomato slices!
Think soups (lentil, miso),
asparagus fritata, mashed cauliflower, sweet potato chips, greens.
There are loads of vegetarian options including bean burgers, sweet
potato fritata, ris - oat - o, chickpea tagine and quinoa & avocado salad!
I chose to make
mini fritatas, a combination of smoked salmon toasts + avocado toasts, and fresh fruit skewers.
mmm... We always make extra sauce and aioli - great on a tortilla (similar to
the fritatas you posted about in the past).
