Hi Ella, I have all of these apart
from the cacao butter, is there anything I can use instead or add more of to substitute?
I did have a problem with the chocolate separating
from the cacao butter as well though.

I'm not sure if this was down to using homemade almond
butter (previously used cashew
butter), not sifting the raw
cacao or over-mixing in the Magimix — any thoughts on this would be appreciated (although this may be better directed at Madeleine as the recipe originated
from her.)

I used Wild Friends Vanilla Espresso Almond
Butter, and improvised the choc chips missing
from my pantry by chopping up 3 Guittard Semi-Sweet baking bars and topped off the 1 cup needed with
Cacao Nibs.
But I normally eyeball it by roughly measuring small chunks shavings of
cacao butter in a Tablespoon, then melt it and measure, and slightly adjust
from there.
Well, both raw
cacao (available as powder,
butter or nibs) and cocoa are made
from the
cacao bean, but are the result of very different routes to the grocery store shelf... and have very different nutritional values!
