My frozen coconut yoghurt recipe is high in fat, giving it a creamy texture and much fuller flavour!

coconut yoghurts and cashew cheese from Utopia Foods and mini ice cream cones from Phat Fox
Frozen Fun (I confess... I had four)!

frozen blueberries 1/2 cup
frozen raspberries 1 handful spinach leaves, washed well 1 cup unsweetened almond or drinking
coconut milk 1 Tbsp cashew butter 1 Tbsp
coconut yoghurt 1 cm piece fresh ginger, grated pinch vanilla powder
Serve sprinkled with
freeze dried raspberries, fresh berries and / or your favourite
coconut yoghurt or nice cream.

Yoghurt 2 Tbsp Brown Sugar /
Coconut Sugar 1 Cup Almond Milk 1 tsp Cinnamon 1/2 tsp Vanilla 1/4 Cup Pecan Nuts 1
Frozen Banana
Blend the first 8 ingredients (acai, mango, pineapple,
frozen berries, protein powder, chia seeds, flax seeds and
coconut yoghurt) until well combined and smooth.
Berry Blitz Smoothie 1 cup mixed
frozen berries 1/2 cup quinoa milk 1/2 cup almond milk 1 cup ice cubes 2 tbsp lactose free
yoghurt 1 tsp
coconut sugar (opt) Blend all ingredients and -LSB-...]
Serve the puddings while hot, either straight up or sprinkled with
freeze dried raspberries, fresh berries and / or your favourite
coconut yoghurt or nice cream.
Turn your protein shake into a delicious and nutritious meal smoothie by adding in fresh or
frozen fruits, vegetables (spinach leaves, carrots), natural (greek)
yoghurt, ginger,
coconut oil, nuts, seeds, oats and other superfoods.
Once
frozen blend together with some chilled
coconut cream or whole
yoghurt and you have yourself some delicious fresh sorbet / icecream.
* The toppings I'd recommend for these overnight oats are: your favourite
yoghurt (dairy or non-dairy), nut butter, mixed seeds (pumpkin, sunflower), chopped nuts,
coconut flakes, fresh or
frozen berries, kiwi fruit, banana.
My favourite is a spoonful of
coconut yoghurt, something crunchy (e.g. pumpkin seeds) and fresh or
frozen berries.
Beach Cottage Recipe Notes ** using
frozen berries too makes it cold and adds a bit more fruity sweetness (throw in any berries), a banana is good here, milk (
coconut, soy or regular) makes this creamier and more filling,
yoghurt is also good, * no rhyme or reason anything goes * leave out the honey if you don't need a sugar hit (I love the properties of honey so add it here)
