I did not develop the recipe, Martina did, but you can sub
full fat coconut milk for the whipping cream.
Since I following Weight Watchers, I substituted
the full fat coconut milk for unsweetened coconut milk and served it over Green Giant riced cauliflower.
To make this recipe lower in fat, you may substitute
the Full Fat Coconut Milk for Lite Coconut Milk
Make the coconut whipped cream by chilling your can of
full fat coconut milk for 24 hours, or longer, to allow the cream to separate from the coconut water.
** Refrigerate your can of coconut cream or
full fat coconut milk for at least 4 hours before carefully opening it and only scooping the coconut cream off the top.
Sometimes I substitute
