For part two of my quest to use up a mountain of zucchini from my garden, I considered making a simple pasta dish —
saute squash with
garlic and throw it
on spaghetti.
In a medium sauce pan
saute 1 clove finely chopped
garlic in 1 Tablespoon of olive oil for a minute, add 1 (28 - ounce) can San Marzano pureed tomatoes, 1 (14 - ounce) can diced tomatoes, 1/2 teaspoon dired oregano, 1/2 teaspoon dried basil, pinch of salt
and pepper to taste (this varies depending
on if you are using no added salt tomatoes).
Remove ribs
and stems, chop into bite - sized pieces / Heat oil in a large skillet / If you're using

and steam kale until wilted but still bright green, adding a tablespoon or so water, if needed / Make a round opening in kale large enough for a large egg yolk / Crack egg

I
saute a few pounds of onions &

and add salt & pepper to taste 12) Serve hot
and garnish with chopped spring onions
My creamed spinach was made by
sauteing leeks,
garlic and mushrooms til nice
and toasty, then adding 1 lb of frozen chopped spinach along with a bit a concentrate broth I had
on hand.
For dinner tonight, I will make Chili -
garlic shrimp served
on a sizzling plate
and some Asian greens
sauteed in oyster sauce.
In the skillet,
saute the finely diced onion, tomatoes, bell pepper
and garlic and cook for about 3 minutes
on medium heat until onions are translucent.
Saute onion
and garlic in butter for 5 min
on medium heat then add mushrooms.
Heat up a medium size skillet
on medium heat with olive oil Add the chopped onions
and saute until golden brown Add the carrots
and spinach
and garlic.
I used the full amount of pasta (swapping out whole grain rotini, because that's what I had
on hand), doubled the spinach but did not
saute it, tripled the
garlic, used the whole can of beans, increased the mustard to 2T,
and added 2T each of chopped fresh basil, finely - shredded Grana Padano cheese,
and pine nuts.
