got was from a guy named Michael - Paul Patterson at

Kefir grains getting smaller... I must add that these
grains were not bought from Michael, but from another source and they were totally dried ones which I fermented in the same brand of pasteurised wholemilk all the while, and also at the same temperature of between 26 to 28 degree F. since I am living in a tropical country.
I learnt to make
kefir by mostly watching YouTube videos, at first I had to
get accustomed to the taste and adjust the time of fermentation (more time, more sour) less time, less sour, around 24 hours is about right, but it's up to you; if you like it creamy then after you remove the
grains leavbe the
kefir out on the counter for 12 hours or so, timing is not a big deal and don't wash the
grains!
I've never been addicted to soda or anything, but I do enjoy drinking bubbly beverages from time to time and with using the water
kefir grains to make this you are
getting some probiotics as well.
When there are too many
grains initially the
kefir gets very sour without
getting too thick.

What you can
get at Whole Foods is a
kefir drink... it does not contain the
grains needed to culture your own
kefir.
I suggest you put the
kefir grains in real milk for a week to
get some growth then switch half of them to coconut milk for slow growth, or to coconut water for no more growth.
The person receiving these dried
grains will need to soak them in milk to wake them up similar to the process above — it may take 3 - 4 batches to
get a consistent and tasty
kefir again.
My
Kefir wasnt coming out think and creamy like you
get at the store so now I add a splash of cream to my milk nd
grains mix before fermenting.
