Hi Charlie, It's certainly worth a try — I'd recommend using gel coloring because it mixes in more quickly and evenly than
powder — divide the batter as soon as the
meringue has been incorporated but before it
gets to piping stage, otherwise it will be overmixed after you stir in the color.
For a Swiss
meringue for the shells, I'd keep the eggwhite and sugar amounts the same, but I would still steer clear of liquid (as opposed to gel or
powder) food colouring — it just takes so much to
get a deep colour.

Once the
meringues are cooling make the homemade whipped cream by whisking the heavy cream and
powdered sugar for 2 - 3 minutes or until you
get the desired whipped cream consistency.
